Peter and his wife, Valencia, founded Wineland Dressings in 2000 while Peter was executive Chef at Hillside Estate Winery in Penticton. He was Chef at Hillside until 2009 when he decided to concentrate on Wineland Dressings full time.
Peter grew up in Penticton, graduating from Penticton High School in 1977. He attended Norwich City College in Norwich U.K. obtaining a diploma in Hotel & Catering Management. Several years experience working for international hotel companies and national catering operations resulted in Peter becoming the Food and Beverage Manager of London’s famous Café Royal. The Grill Room Restaurant obtained a prestigious Michelin Star while Peter was involved with the Café Royal.
Peter met and married Valencia in London and after the birth of their first child decided to return to Canada and Penticton. He worked as Chef in several of the finest restaurants in the South Okanagan developing many of the products that Wineland Dressings now offer. Wineland Dressings was created because customers dining at Hillside Estate Winery constantly asked if they could purchase the salad dressings served in the restaurant. Being at a winery meant access to bottles and a retail sales outlet and so Wineland Dressings was born.
Wineland Dressings now has its’ own production facility and the range of products has expanded to include chutneys and sauces.

Award winning soft serve ice cream is gluten and peanut free and is produced using local ingredients. We offer 3 different sizes, to suit large and small appetites, in either vanilla, chocolate or our ever popular swirl of both. Each cone is served with a Cadbury chocolate flake that we import from the U.K. and a choice of cake cones, waffle cones or waffle bowls. For a gluten free treat, we can serve in plastic sundae dishes. There is also a choice of raspberry, chocolate or butterscotch toppings.
After suffering 6 long years of deprivation from anything close to a true blue Australian meat pie, the back bone to any Aussies diet, it became evidently clear that the only way to solve this problem was to get out there and make our own!
All our pies are made from the finest ingredients, what makes them Australian?
No peas and carrots, lots of meat inside a rich tasty gravy that doesn’t run. Flaky puff pastry on the top and a subtle short crust on the bottom, allowing you to hold the pie in one hand and eat on the go!
The idea of bringing the Australian Meat Pie to Canada spawned on a crisp winters day on my way up the black forest chair lift at Big White ski resort, I noticed a perogie concession at the bottom of the run and thought to myself “ why aren’t there any meat pies here? “
Some 4 years later after some minor yet very critical adjustments to an Australian born recipe, we developed the base to what is now known as Real Deal Australian Meat Pies. Why “real deal”??? Because our aim is to produce a true blue representation of Australian meat pies here in Canada, to be as good as, if not better, than what you would find in Australia.
Growing up in Australia I had such a big range of pies available to me, from mass produced brands, to locally made in some of the many small bakeries spread throughout the city of Adelaide, South Australia. This led me to become very critical and carefully selective when it came time to indulge.
This is why quality and consistency are two very important practices that we strive to maintain in the production of our pies. When our pies reach the final stage, if the quality isn’t 100 percent, the answer is simple – we reject them personally.
Real Deal Pies are jam packed with toppings to ensure that there is no mistaking the flavor of pie you are eating. For example, our steak cheese and bacon pies are over flowing with tender cubes of steak and rich gravy, riddled with chunky pieces of bacon and oozing with hot melting cheese. We use lean tender steak, cut into small succulent cubes, removing all the gristle the eye can see, and any large and unwanted pieces of fat along the way. Fresh onions, real bacon and medium aged cheddar cheese are added in for rich flavor.

The winery opened as Ruby Tuesday Winery in 2008 and quickly became popular with visitors to the Naramata Bench as a funky, fun winery with fine wine, great rock and roll music in the vineyard and a wicked line of stiletto shoes for sale in the wine shop.
About two years later we chose to change the name to Ruby Blues Winery to avoid confusion with the U.S. based restaurant chain also called Ruby Tuesday.
We took this opportunity to create a new winery sign on the Naramata Road using an old Volkswagen bus painted for us by local artist Glen Clark, who also did the murals on the winery. Daisy, our bus, has become a local land mark and we have created a special label for our Commune series of wines featuring Daisy.
